I'm currently creating weekly menus for a very special woman. She's a successful entrepreneur; a loving partner; a good friend and she is heading toward a sentinel birthday -- 50!
As part of a stepped-up focus on healthy living, she's asked me to create lunches to support her goals. As a work-from-home solo practicioner, quick, easy and satisfying lunch options are essential. And portion size is a priority.
Mix and Match for 3 lunches (and a little extra!):
Grilled eggplant stuffed with fresh mozarella and parmesan, rolled and baked with a garlicky tomato sauce
Green Beans Almandine
Pork Tenderloin with a Champagne-Pomegranite Glaze
Roasted exotic mushrooms
Zucchini Boats stuffed with sauted zucchini, red peppers, garlic and onion and a smattering of feta cheese
Three-Bean Salad with a Spicey Ranchero Salsa Dressing
